Grilled Tuna and Olive-Rosemary Butter

Garnish with rosemary sprigs.


Ingredients:
1/4 cup butter, unsalted, at room temp
1 Tbsp kalamata olives, pitted, -chopped (or brine-)
1 Tbsp lemon juice, plus 1/4 tsp of the lemon juice
2 tsp rosemary, fresh, chopped or 1/2 tsp rosemary, dried, crumbled
1/4 tsp dijon mustard
3 Tbsp olive oil
1/8 tsp pepper
4 tuna steaks, 1inch thick (about 8 ounces each)
1 rosemary sprig, fresh, (opt)


Directions:
1. Blend butter, olives, 1/4 teaspoon lemon juice, 1 teaspoon rosemary and mustard in small bowl. (Butter can be prepared as far as 2 days in advance. Make sure to wrap securely and refrigerate. Let it sit at room temperature for 45 minutes before continuing.)
2. Whisk olive oil with the remaining 1 tablespoon of fresh lemon juice, the remaining 1 teaspoon of rosemary and pepper in shallow dish. Arrange tuna steaks in dish, turning tuna to coat both sides. Let tuna sit for 15 minutes.
3. Prepare barbecue on high heat. Grill tuna until just cooked through, (about 4 minutes per side.) Transfer to platter. Place 1 tablespoon of rosemary butter on each steak. Garnish with rosemary sprigs.
